A delicious and satisfying breakfast quesadilla with crispy bacon and scrambled eggs.
4 slices of bacon | |
4 eggs | |
Salt and black pepper, to taste | |
4 flour tortillas | |
1 cup shredded cheddar cheese | |
Salsa, for serving | |
Fresh cilantro, for garnish |
1. | Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels. |
2. | In a bowl, whisk the eggs and season with salt and black pepper. |
3. | In the same skillet, pour the whisked eggs and cook until scrambled. |
4. | Place a tortilla on a flat surface and sprinkle with shredded cheese. Top with half of the scrambled eggs and 2 slices of cooked bacon. Fold the tortilla in half. |
5. | Heat a separate skillet over medium heat and add the folded tortilla. Cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown. Repeat with the remaining tortillas and filling. |
6. | Serve the quesadillas with salsa and garnish with fresh cilantro. |
