Ingredients

4 slices of bacon
4 eggs
Salt and black pepper, to taste
4 flour tortillas
1 cup shredded cheddar cheese
Salsa, for serving
Fresh cilantro, for garnish

Instructions

1.Cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels.
2.In a bowl, whisk the eggs and season with salt and black pepper.
3.In the same skillet, pour the whisked eggs and cook until scrambled.
4.Place a tortilla on a flat surface and sprinkle with shredded cheese. Top with half of the scrambled eggs and 2 slices of cooked bacon. Fold the tortilla in half.
5.Heat a separate skillet over medium heat and add the folded tortilla. Cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown. Repeat with the remaining tortillas and filling.
6.Serve the quesadillas with salsa and garnish with fresh cilantro.
