Ingredients
  

  • 6 eggs beaten
  • 1 bunch asparagus trimmed and cut into 1-inch pieces
  • 1 cup grated cheese such as Gruyere or cheddar
  • 1 onion small, chopped
  • 2 tbsp olive oil divided
  • 1/4 cup milk or cream
  • to taste Salt and pepper for seasoning

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Heat 1 tbsp of olive oil in an oven-safe skillet over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Add the asparagus pieces and cook for another 3-4 minutes until they are bright green and slightly tender.
