Ingredients
- 1 pre-made pie crust unbaked
- 1 bunch asparagus trimmed and cut into 1-inch pieces
- 4 ounces feta cheese crumbled
- 1 cup milk
- 3 eggs beaten
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Place pie crust into a quiche or pie pan and trim the edges if necessary.
- Blanch asparagus in boiling water for 2 minutes, then drain and cool.
- In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Spread asparagus and feta cheese evenly over the pie crust.
- Pour egg mixture over the asparagus and feta. Decorate with asparagus.
- Bake in the preheated oven for 35-40 minutes or until the quiche is set and a knife inserted in the center comes out clean.
- Allow to cool for a few minutes before serving.
