Instructions
Heat olive oil in a large skillet over medium-high heat.
Add turkey to skillet and cook until browned, breaking it up into crumbles.
Add mushrooms, onion, garlic, thyme, salt, and pepper to skillet. Cook until mushrooms are tender and onions are translucent.
Make four wells in the turkey mixture and crack an egg into each well. Cover skillet and cook until eggs are cooked to desired doneness.
Garnish with fresh parsley and serve hot.
