Add the diced onion and minced garlic to the skillet and cook until onion is translucent.
Add the butternut squash, diced tomatoes, chicken broth, dried thyme, and dried rosemary to the skillet. Season with salt and pepper to taste.
Cover the skillet and simmer for 10 minutes, until the butternut squash is slightly tender.
Transfer the mixture to a baking dish and bake in the preheated oven for 45 minutes, until the squash is fully cooked and the turkey is heated through.
