- 1 cup almond milk or any milk of choice
- 1 tablespoon maple syrup or sweetener of choice
- 1 teaspoon vanilla extract
- 1 teaspoon instant coffee powder dissolved in a bit of warm water
- 2 tablespoons mascarpone cheese or Greek yogurt
- 1 tablespoon cocoa powder for dusting
In a bowl, combine chia seeds, almond milk, maple syrup, vanilla extract, and dissolved coffee. Stir well.
Let the mixture sit for about 5-10 minutes, then stir again to prevent clumping. Cover and refrigerate overnight, or at least 2-3 hours until the chia seeds expand and create a pudding-like consistency.
Before serving, fold in the mascarpone cheese or Greek yogurt until smooth.
