- 100 grams Rotelle pasta uncooked
- 1 ball Burrata cheese fresh
- 2 cups spinach fresh, washed
- 1/4 cup almonds sliced, toasted
- 2 tablespoons olive oil extra virgin
- 1 clove garlic minced
- to taste salt
- to taste black pepper freshly ground
Cook the rotelle pasta according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
Add the cooked pasta to the skillet and toss to combine with the spinach and garlic.
Season with salt and freshly ground black pepper to taste.
Transfer the pasta mixture to a serving plate and top with the fresh burrata cheese.
Sprinkle the toasted almond slices over the top and serve immediately.
