In a large skillet, cook the pork sausage over medium heat until browned and cooked through. Remove from skillet and set aside.
In the same skillet, add the diced potatoes, onion, green bell pepper, and garlic. Cook for about 10 minutes, or until the potatoes are cooked through and golden brown.
Add the cooked sausage back to the skillet and stir in the paprika, dried thyme, salt, and pepper. Cook for an additional 5 minutes to allow the flavors to meld together.
If desired, create 4 wells in the hash and crack an egg into each well. Cover the skillet and cook for about 5 minutes, or until the eggs are cooked to your liking.
