In a large pan, heat the vegetable and sesame oil over medium heat.
Add the sliced pork and cook until browned.
Add the minced garlic and sliced leeks and cook for an additional 5 minutes, until the leeks are tender.
In a small bowl, mix together the soy sauce and hoisin sauce. Pour the sauce over the pork and leek mixture and stir to combine.
Cook for another 2-3 minutes, until the sauce has thickened and coats the pork and leeks.
Season with salt and pepper to taste.
