Cook the penne pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic cloves. Saute until the onion is translucent.
Add the cooked lobster meat, roasted red peppers, and heavy cream to the skillet. Stir well to combine.
Bring the mixture to a simmer and let it cook for about 5 minutes, until the sauce thickens slightly.
Add the grated Parmesan cheese and chopped parsley to the skillet. Stir until the cheese is melted and the sauce is smooth.
Season with salt and pepper to taste.
Add the cooked penne pasta to the skillet and toss to coat the pasta with the lobster and red pepper sauce.
Serve hot and garnish with additional Parmesan cheese and parsley, if desired.
