Preheat your oven to 400°F (200°C).
In a saucepan, melt the butter over medium heat. Stir in the honey, salt, and pepper. Add the baby carrots and toss to coat evenly.
Cook the carrots for about 10 minutes, or until they start to become tender, stirring occasionally.
Roll out the thawed puff pastry and cut into squares large enough to wrap around the carrots.
Place a few glazed carrots in the center of each pastry square and fold the corners over to enclose the carrots.
Place the wrapped carrots on a baking sheet lined with parchment paper, seam side down.
Bake for 12–15 minutes, or until the pastry is golden brown.
Remove from oven and let cool slightly before serving.
