A delightful appetizer or side dish, this recipe features tender baby carrots enveloped in a buttery puff pastry with a sweet honey glaze.

Ingredients
  

  • 1 package puff pastry sheets thawed
  • 12 oz baby carrots washed and trimmed
  • 2 tbsp unsalted butter melted
  • 3 tbsp honey adjust sweetness to taste
  • 1 tsp salt
  • 1 tsp black pepper freshly ground

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a saucepan, melt the butter over medium heat. Stir in the honey, salt, and pepper. Add the baby carrots and toss to coat evenly.
  • Cook the carrots for about 10 minutes, or until they start to become tender, stirring occasionally.
  • Roll out the thawed puff pastry and cut into squares large enough to wrap around the carrots.
  • Place a few glazed carrots in the center of each pastry square and fold the corners over to enclose the carrots.
  • Place the wrapped carrots on a baking sheet lined with parchment paper, seam side down.
  • Bake for 12–15 minutes, or until the pastry is golden brown.
  • Remove from oven and let cool slightly before serving.
