Cut the chicken breasts into small pieces and season with salt and pepper.
Heat some olive oil in a pan and fry the chicken until cooked through. Remove from the pan and set aside.
In the same pan, add the sliced bell peppers and onion. Cook until softened.
Beat the eggs in a bowl and season with salt and pepper.
Pour the beaten eggs into the pan with the vegetables. Cook until the edges start to set.
Add the fried chicken on top of the omelette.
Flip one half of the omelette over the chicken and press down gently.
Cook for another minute until the omelette is fully set and golden brown.
Remove from the pan and serve hot. Enjoy!
