Season the leg of lamb with salt and pepper.

Rub the mixture all over the lamb, covering it evenly.
Place the lamb on a roasting rack in a roasting pan.
Roast the lamb in the preheated oven for 1 hour 30 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.
Remove the lamb from the oven and tent it with aluminum foil.
Let the lamb rest for 15 minutes before carving.
