Preheat oven to 345°F.
Filet your boneless chicken breasts by slicing them lengthwise to make two or three thin pieces per breast.
In a bowl, mix mayonnaise and Parmesan cheese. Use double the amount of mayo to Parmesan (e.g., for two people, use 1/2 cup mayo and 1/4 cup Parmesan). Adjust quantities based on the number of chicken breasts.
Place the chicken pieces in an ovenproof pan.
Spread the mayo mixture over each piece of chicken, as if frosting a cake.
Bake for 45 minutes at 345°F.
Serve with your choice of sides. Don’t worry if some of the mayo mixture ends up in the bottom of the pan; the chicken will be delicious!
