- 200 grams chicken breast cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 medium onion sliced
- 2 cloves garlic minced
- 1 tablespoon curry powder
- 1 cup chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch dissolved in 2 tablespoons of water
Heat the oil in a pan over medium heat and add the sliced onion, cooking until soft.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the chicken pieces to the pan and cook until lightly browned.
Sprinkle the curry powder over the chicken and mix well to coat.
Pour in the chicken broth and soy sauce, bring to a simmer and cook for 10 minutes.
Stir in the cornstarch mixture to thicken the sauce and cook for another 2-3 minutes.
Serve hot over rice or noodles, garnished with fresh cilantro or chilly peppers if desired.
