Season chicken breasts with salt and pepper.
Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 4-5 minutes. Remove chicken from pot and set aside.
In the same pot, add onion and garlic. Cook until onion is translucent, about 2-3 minutes.
Add chicken broth and water to the pot. Bring to a boil.
Stir in orzo pasta and let cook for 8-10 minutes, until pasta is al dente.
Add cooked chicken back to the pot. Stir in spinach, lemon juice, and lemon zest. Cook for an additional 2-3 minutes, until spinach is wilted.
Serve hot and enjoy!
