- 2 chicken breasts diced
- 1 tbsp olive oil
- onion small, diced
- 2 cloves garlic minced
- 2 cups spinach fresh
- 4 eggs
- Salt and pepper to taste
In a large skillet, heat the oil over medium heat.
Add the onion and garlic and cook until softened.
Add the diced chicken and cook until browned and cooked through.
Add the spinach and cook until wilted.
Make four wells in the skillet and crack an egg into each well.
Cover the skillet and cook until the eggs are cooked to your liking.
Season with salt and pepper to taste.
