A delicious and refreshing pasta salad that is quick and easy to make.
200g pasta, cooked and cooled | |
1 cup cherry tomatoes, halved | |
1/2 cup cucumber, diced | |
1/4 cup red onion, sliced | |
1/4 cup black olives, sliced | |
1/4 cup feta cheese, crumbled | |
2 tablespoons fresh basil, chopped | |
2 tablespoons fresh parsley, chopped | |
2 tablespoons olive oil | |
1 tablespoon red wine vinegar | |
Salt and pepper to taste |
1. | In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, black olives, feta cheese, basil, and parsley. |
2. | In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. |
3. | Pour the dressing over the pasta salad and toss to coat. |
4. | Chill in the refrigerator for at least 1 hour before serving. |
