Ingredients

1 pound pork tenderloin, sliced into rounds
1 large eggplant, sliced into rounds
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon paprika

Instructions

1.Preheat the oven to 400°F (200°C).
2.Place the pork rounds and eggplant rounds on a baking sheet.
3.Drizzle with olive oil and season with salt, pepper, oregano, basil, garlic powder, onion powder, and paprika.
4.Bake for 15-20 minutes or until the pork is cooked through and the eggplant is tender.
5.Serve hot and enjoy!
