Delicious and healthy pork and eggplant rounds recipe
1 pound pork tenderloin, sliced into rounds | |
1 large eggplant, sliced into rounds | |
2 tablespoons olive oil | |
Salt and pepper to taste | |
1 teaspoon dried oregano | |
1 teaspoon dried basil | |
1/2 teaspoon garlic powder | |
1/2 teaspoon onion powder | |
1/4 teaspoon paprika |
1. | Preheat the oven to 400°F (200°C). |
2. | Place the pork rounds and eggplant rounds on a baking sheet. |
3. | Drizzle with olive oil and season with salt, pepper, oregano, basil, garlic powder, onion powder, and paprika. |
4. | Bake for 15-20 minutes or until the pork is cooked through and the eggplant is tender. |
