Mediterranean Beef and Egg Scramble with Grilled Tomatoes
A delicious and nutritious breakfast recipe filled with Mediterranean flavors.
Ingredients
- 1 pound ground beef
- onion small, diced
- 2 cloves garlic minced
- 1 tsp dried oregano
- 1/2 tsp thyme dried
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 eggs large
- 1/2 cup feta cheese crumbled
- 2 tbsp parsley chopped fresh
- 4 Tomatoes large, halved
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion, minced garlic, dried oregano, dried thyme, salt, and black pepper to the skillet. Cook for an additional 2 minutes.
- In a separate bowl, whisk the eggs together. Pour the whisked eggs into the skillet with the beef and onion mixture. Stir to combine.
- Continue cooking the mixture over medium heat, stirring occasionally, until the eggs are cooked to your desired consistency.
- While the eggs are cooking, preheat a grill or grill pan over medium-high heat. Brush the halved tomatoes with olive oil and season with salt and pepper.
- Grill the tomatoes for about 5 minutes on each side, until they are slightly softened and grill marks appear.
- Serve the beef and egg scramble hot, topped with crumbled feta cheese, chopped fresh parsley, and the grilled tomatoes on the side.
