Lemon Herb Roast Chicken
A delicious and flavorful roast chicken recipe infused with lemon and herbs.
Ingredients
- 1 chicken
- 2 lemons
- 4 cloves garlic
- 1 tbsp thyme dried
- 1 tbsp rosemary dried
- 1 tbsp dried parsley
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the chicken inside and out, then pat dry with paper towels.
- Cut one lemon into halves and squeeze the juice over the chicken, inside and out.
- Place the lemon halves inside the chicken cavity, along with the garlic cloves.
- In a small bowl, mix together the dried thyme, rosemary, parsley, salt, and pepper. Rub this mixture all over the chicken, including under the skin.
- Drizzle the olive oil over the chicken, then place it in a roasting pan.
- Slice the second lemon and arrange the slices around the chicken in the roasting pan.
- Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
