Lobster and Roasted Red Pepper Penne
A delicious and flavorful pasta dish made with lobster and roasted red peppers
Ingredients
- 2 lobsters cooked and meat removed
- 1 red bell pepper roasted and sliced
- 1 onion diced
- 3 cloves garlic minced
- 1 cup heavy cream
- 1 cup parmesan cheese grated
- 1/2 cup parsley chopped
- 1 pound penne pasta
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic cloves. Saute until the onion is translucent.
- Add the cooked lobster meat, roasted red peppers, and heavy cream to the skillet. Stir well to combine.
- Bring the mixture to a simmer and let it cook for about 5 minutes, until the sauce thickens slightly.
- Add the grated Parmesan cheese and chopped parsley to the skillet. Stir until the cheese is melted and the sauce is smooth.
- Season with salt and pepper to taste.
- Add the cooked penne pasta to the skillet and toss to coat the pasta with the lobster and red pepper sauce.
- Serve hot and garnish with additional Parmesan cheese and parsley, if desired.
