A delicious and healthy salad with fried anchovies
2 cups mixed salad greens | |
1/2 cup cherry tomatoes, halved | |
1/4 cup red onion, thinly sliced | |
1/4 cup Kalamata olives | |
1/4 cup feta cheese, crumbled | |
1/4 cup sun-dried tomatoes, chopped | |
1/4 cup fresh basil leaves | |
1/4 cup crispy fried anchovies | |
2 tablespoons extra virgin olive oil | |
1 tablespoon red wine vinegar | |
1/2 teaspoon dried oregano | |
Salt and pepper to taste |
1. | In a large bowl, combine the mixed salad greens, cherry tomatoes, red onion, Kalamata olives, feta cheese, sun-dried tomatoes, and fresh basil leaves. |
