A delicious and healthy chicken and spinach lemon soup that is easy to make and full of flavor.
2 boneless, skinless chicken breasts, thinly sliced | |
Salt and pepper, to taste | |
2 tablespoons olive oil | |
1 onion, diced | |
4 cloves garlic, minced | |
6 cups chicken broth | |
1 cup water | |
3/4 cup orzo pasta | |
3 cups fresh spinach | |
Juice of 1 lemon | |
Zest of 1 lemon |
1. | Season chicken breasts with salt and pepper. |
2. | Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 4-5 minutes. Remove chicken from pot and set aside. |
3. | In the same pot, add onion and garlic. Cook until onion is translucent, about 2-3 minutes. |
4. | Add chicken broth and water to the pot. Bring to a boil. |
5. | Stir in orzo pasta and let cook for 8-10 minutes, until pasta is al dente. |
6. | Add cooked chicken back to the pot. Stir in spinach, lemon juice, and lemon zest. Cook for an additional 2-3 minutes, until spinach is wilted. |
7. | Serve hot and enjoy! |
