1 lb ground beef | |
1 medium onion, chopped | |
1 clove garlic, minced | |
1 cup long grain rice | |
2 cups beef broth | |
1 can (10.75 oz) condensed tomato soup | |
1 can (4 oz) sliced mushrooms, drained | |
2 cups shredded cheddar cheese | |
1/2 tsp dried thyme | |
Salt and pepper, to taste |
1. | Preheat the oven to 375°F (190°C). |
2. | In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and cooked through. Drain any excess fat. |
3. | Stir in the rice, beef broth, condensed tomato soup, mushrooms, dried thyme, salt, and pepper. Bring to a boil. |
4. | Transfer the mixture to a greased 9x13-inch baking dish. Cover with foil. |
5. | Bake for 30 minutes. Remove the foil and sprinkle the shredded cheddar cheese on top. |
6. | Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly. |
