A delicious and healthy salad made with chickpeas, vegetables, and a creamy ranch dressing.
Ingredients
- 2 cups cooked chickpeas
- 1 cup cherry tomatoes halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, thinly sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup ranch dressing
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
- Add the ranch dressing and toss until all the ingredients are well coated.
- Season with salt and pepper to taste.
