Ingredients
  

  • 1 pound pork sausage
  • 2 cups potatoes diced
  • 0.5 onion chopped
  • 1/2 green bell pepper chopped
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1/2 tsp thyme dried
  • Salt and pepper to taste
  • 4 eggs optional

Instructions
 

  • In a large skillet, cook the pork sausage over medium heat until browned and cooked through. Remove from skillet and set aside.
  • In the same skillet, add the diced potatoes, onion, green bell pepper, and garlic. Cook for about 10 minutes, or until the potatoes are cooked through and golden brown.
  • Add the cooked sausage back to the skillet and stir in the paprika, dried thyme, salt, and pepper. Cook for an additional 5 minutes to allow the flavors to meld together.
  • If desired, create 4 wells in the hash and crack an egg into each well. Cover the skillet and cook for about 5 minutes, or until the eggs are cooked to your liking.
