Ingredients
  

  • 1 lb ground beef
  • 1 onion medium, chopped
  • 1 clove garlic minced
  • 1 cup long grain rice
  • 2 cups beef broth
  • 1 can tomato soup 10.75 oz, condensed
  • 1 can mushrooms 4 oz, drained, sliced
  • 2 cups shredded cheddar cheese
  • 1/2 tsp thyme dried
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and cooked through. Drain any excess fat.
  • Stir in the rice, beef broth, condensed tomato soup, mushrooms, dried thyme, salt, and pepper. Bring to a boil.
  • Transfer the mixture to a greased 9x13-inch baking dish. Cover with foil.
  • Bake for 30 minutes. Remove the foil and sprinkle the shredded cheddar cheese on top.
  • Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.
