A healthy and low-carb alternative to regular rice made from cauliflower.

Ingredients
  

  • 1 head cauliflower medium
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Wash and dry the cauliflower.
  • Remove the outer leaves and cut the cauliflower into florets.
  • Place the florets in a food processor and pulse until the cauliflower resembles rice grains.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the cauliflower rice to the skillet and season with salt and pepper.
  • Saute for 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  • Serve hot as a side dish or in place of rice in your favorite recipes.
