Ingredients
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic minced
- 4 cups cauliflower florets
- 4 cups vegetable broth
- 1 cup milk
- 1/2 tsp dried thyme
- 1/2 tsp smoked paprika
- 1/2 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the cauliflower florets, vegetable broth, milk, dried thyme, and smoked paprika to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, until the cauliflower is tender.
